Eug\u00e8ne et son p\u00e8re Maxime ont \u00e9t\u00e9 les fondateurs de la fonderie drouaise \u00e0 Vernouillet en 1908. Ensuite, en 1950 le lancement des pains blancs cr\u00e9\u00e9s par un p\u00e9trissage intensifi\u00e9, avec l\u2019apport d\u2019une deuxi\u00e8me vitesse. La cause de cette d\u00e9couverte venait de la farine noire d\u00e9grad\u00e9e datant de la guerre. Puis, en 1960, arrive le p\u00e9trin \u00e0 spirale, permettant ainsi un gain de temps non n\u00e9gligeable \u00e0 p\u00e9trissage encore plus intensifi\u00e9 !<\/p>\n<p>Ce n\u2019est que 5 ans plus tard que viennent les importantes chambres de fermentation pour une pousse lente en p\u00e2tons, am\u00e9liorant le confort du boulanger. Puis, c\u2019est en 1975 que la pousse lente aromatique apr\u00e8s p\u00e9trissage (semi-masse) est invent\u00e9e et, en 2005, qu\u2019est cr\u00e9\u00e9e la diviseuse-formeuse compacte.<\/p>\n<p>C\u2019est donc apr\u00e8s avoir \u00e9tudi\u00e9 toutes ces inventions que Michel LOISELET cr\u00e9e, en 2009, le fameux p\u00e9trin fermenteur batteur AEROMIX<strong>\u00a9<\/strong> lanc\u00e9 \u00e0 EUROPAIN en 2012. Ce p\u00e9trin, \u00e0 combinaison d\u2019outils et mouvement lents, pr\u00e9serve les fibres des p\u00e2tes et cr\u00e8mes et favorise le d\u00e9veloppement des ar\u00f4mes.<\/p>\n<p>C\u2019est en 2015 qu\u2019il d\u00e9couvre la m\u00e9thode Sant\u00e9 Saveur en fournils \u00e0 2 pointages successifs sur levain et levure rapide, \u00e9voluant en 2018 \u00e0 un seul pointage sur levure lente (d\u2019embl\u00e9e compatible avec un levain) qui assure de fa\u00e7on significative, avec la fermentation lente, une forte d\u00e9gradation des glutens, tout en permettant des pousses en masses et\/ou semi-masses r\u00e9g\u00e9n\u00e9r\u00e9es par la multiplication de cellules vivantes naturelles, sur axes sant\u00e9, saveur et conservation (biotechnologie).<\/p>\n<p>Concr\u00e8tement, cela signifie que des personnes hypersensibles au gluten peuvent manger du pain avec le process LEVAINTOLYSE\u00a9. A l\u2019heure actuelle, une dizaine de personnes intol\u00e9rantes ont test\u00e9 le pain fait par Michel LOISELET sans r\u00e9action allergique et l\u2019une d\u2019entre elle a t\u00e9moign\u00e9 par \u00e9crit qu\u2019elle n\u2019a re\u00e7u aucun des sympt\u00f4mes habituels.
